The G-8 is very similar to the profile of the G-9 bread knife but without the serrations. This makes a great carving and slicing knife, as it has a long and narrow blade. This carving knife makes excellent work of roasts and joints. It's easy to cut thin even slices of meat with this knife, it works best with roast hams, gamon, beef, salmon, de-boned lamb and more.
