The G-5 is a long-time favourite and one of the best selling blades in the original Global Classic series. The knife has a long rectangular shaped, flat blade with only a slight knife point. The G-5 Vegetable Chopper 18cm Blade is inspired by traditional Japanese "Usaba" (vegetable) knives, popular amongst professional chefs in Japan. The shape of the blade is to encourage a straight up and down chopping motion. The full blade length will come in contact with the chopping board and go straight through the whole vegetable. It is not necessary to push and pull the knife horizontally through the chopping motion.
There are several variations of this knife within the Global range. The Global GS-5 is the smaller version, the G-81 is the fluted version. The fully forged GF-36 is recommended for professional chefs.
